Beer & honey mustard

Ingredients
40g brown mustard seeds
80g yellow mustard seeds
45ml apple cider vinegar
135ml BBQ beer
2 tbsp brown sugar
1 tbsp honey
Salt to taste
Method
1. In a jug add mustard seeds with vinegar and beer. Mix well and cover.
2. Leave in a dry place overnight or for at least 12 hours, to let the seeds absorb the liquid.
3. Stir in the brown sugar, honey and salt. Mix well.
4. Add to a food processor and process to your own personal tastes. The mixture will appear runny to start with, but the more you process the thicker it will become.
6. Tip the mixture into a saucepan and gently heat, stirring constantly (to approx. 65ºC). Do not boil. Allow to cool before transferring to a sterilised container. Store in the fridge.
7. Enjoy on burgers, cheese & ham sandwiches, and hotdogs.
