Smoked Chicken Wings

with a blackberry barbecue sauce

Smoky, sticky, and packed with flavour – these smoked chicken wings are next-level barbecue fare. Paired with a rich, homemade blackberry BBQ sauce, they strike the perfect balance between sweet, sharp, and spicy. Whether you're firing up the grill for a summer gathering or just fancy something a little different, this recipe by Aston Prideaux is a guaranteed crowd-pleaser.

Ingredients

1.25kg/2lbs 12oz chicken wings

Ingredients - SAUCE

1 small onion, finely diced
1 tbsp olive oil
300g / 10½ oz blackberries
1 cup water
125g / 4½ oz tomato ketchup
1 tbsp blackberry or sherry vinegar
1 tbsp Worcestershire sauce
1 tsp hot sauce
1 tsp mustard
2 tsp smoked paprika
½ tsp cinnamon
50g / 1¾ oz light brown sugar
Salt and pepper to taste

Method

  1. Start by setting up your grill to cook the wings indirectly and add a couple of chunks of wood to the charcoal.

  2. Oil the wings, sprinkle with flaky salt and place them on the grill. I like to put the fire baskets in the middle with the wings all around the outside so they are an even distance from the heat.

  3. To make the blackberry BBQ sauce, start by sweating off the finely chopped onion with 1 tbsp of oil. When the onion is translucent, add the blackberries and 1 cup of water and continue to cook for another 5-10 minutes until they start to break down.

  4. Add the rest of the ingredients and gently simmer for 10 minutes.

  5. Pass through a sieve to remove the seeds (you can just blend it, but I prefer this one as a smooth sauce).

  6. When your wings hit an internal temperature of at least 75°C brush them with the blackberry BBQ sauce and give it a final 5 minutes to let it set up.
