Skate Wings with Prawns and Brown Butter

Skate wings are a real winner when it comes to fish on the BBQ or in a wood-fired oven; they are substantial, affordable, meaty and very tasty. These wings were from a sustainable catch, and were only £3 each, and one easily feeds a hungry diner. Cook on a bed of something green – in this case elephant garlic shoots – but wild garlic, thin slices of leek, samphire or most herbs work well and stop the fish sticking as well as adding a bit of extra flavour.

Ingredients

2 small skate wings
1 lemon
100g/3½ oz cold water prawns
50g/1¾ oz salted butter
A handful of green shoots, such as wild garlic
Coarse sea salt and black pepper to season

Method

  1. Can be cooked on a high heat grill or pizza oven at 200°C/392°F. I used a small pizza oven and placed the elephant garlic shoots on a foil tray, followed by the skate wings, seasoning and slithers of lemon on top.

  2. Cook under the flame of the pizza oven at for around 15 minutes turning occasionally, until the top is lightly charred and the fish cooked through to 60°C/140°F internal temperature.

  3. Allow the fish to rest while browning off the butter in a pan. Add the prawns to the butter right at the end and pour over the resting skate wings.

  4. Serve on a plate with some of the charred garlic shoots and enjoy.
